With the NEH2O, we are bringing proven autoclave technology from industry to small and medium-sized businesses. This compact, electrically heated autoclave has been specifically developed for food processing businesses – including butcher shops, food manufacturers, soup kitchens, farm shops and direct marketers who want to preserve their products safely and gently. It reaches temperatures of up to 130°C and has a capacity for up to 360 cans or 600 vacuum packs.
And all without the need for an expensive external steam generator: the NEH2O only requires electricity, water, wastewater, compressed air and exhaust air – connect it, switch it on and get started.
The Autoclave technology for Food Production – economical and self-contained
Large sterilization systems are often impractical for food businesses due to the high costs associated with an external steam generator. This is exactly where the NEH2O comes in: as a self-contained unit, it generates the required heat electrically, eliminating the need for a separate steam boiler. This makes professional sterilization and pasteurization economically viable even for businesses for which a large industrial system has previously been too big and too expensive.
Thanks to its horizontal design, the NEH2O can be loaded conveniently and with less strain on your back at a comfortable working height using a basket system – no more heavy overhead cranes or dangerous leaning into the chamber.
Who is the NEH2O suitable for?
The autoclave is designed for all businesses that want to process smaller batches professionally and safely:
- Small and medium-sized butcher shops and meat processors
- Food manufacturers and delicatessen producers
- Soup kitchens, commercial kitchens and sauce manufacturers
- Farm shops and direct marketers
- Any business that does not yet have its own steam generator
Whether meat and sausage products, soups and stews, sauces, ready meals or delicatessen products – preserve your specialties safely and gently, for example in Weck jars, screw-top jars or preserving jars.
For larger production volumes, we also offer industrial autoclaves for the food and tobacco industry. You can find more information about our industry solutions for food and tobacco here.

- suitable for all types of packaging
- high water circulation for homogeneous heat distribution
- short heating times and oxygen-free treatment
- heat transfer into the product from all sides

Safe operation with the Scholz quick-lock closure
For easy and safe operation, the NEH2O is equipped with the proven Scholz quick-lock closure – the heart of Scholz autoclaves for over 100 years and state of the art.
- mechanically locked by a pneumatic cylinder
- released only after the process has ended – at a defined temperature and defined pressure
- integrated glass breakage protection
This reliably prevents the system from being opened while under pressure or at high temperature.
Capacities – what fits in the NEH2O

Most frequently asked questions on NEH2O
Which businesses are the NEH2O suitable for?
It is designed as an autoclave for small-scale producers and is aimed at small and medium-sized food businesses – such as butchers, meat processors, artisan producers, delicatessen manufacturers, soup kitchens, farm shops and direct sellers. Wherever a large-scale industrial unit would be oversized and too expensive, the NEH2O enables professional sterilization and pasteurization in manageable batches. This allows even smaller producers to preserve their products safely and to a consistent standard of quality.
What distinguishes it from a large-scale industrial system?
The most important difference is the heating system: the NEH2O is electrically heated and does not require an external steam generator. This eliminates the high investment and installation costs associated with a separate steam boiler, which are often the reason why small-scale manufacturers fail to set up their own sterilization systems. The autoclave operates as a compact, self-contained unit; it is space-saving and can be set up in almost any workshop with just a few connections. For larger production volumes, Scholz offers the appropriate expansion with its industrial sterilization systems.
Why does the NEH2O not require a steam generator?
The NEH2O generates the heat required for sterilization electrically – directly within the unit. A separate steam boiler or an on-site steam supply is not required. This not only makes operation more cost-effective, but also simpler, as there is no need to install, maintain or obtain approval for an additional steam system. However, for those who already have a steam supply, the autoclave for the trades can still be optionally fitted with a steam connection.
What connections and how much space does the autoclave require for food processing businesses?
The NEH2O only requires electricity (63 A or 128 A connection), water, wastewater, compressed air and exhaust air. Thanks to its compact, horizontal design, the NEH2O can also be installed in smaller spaces and is ready for operation immediately after connection (plug & play). Loading is easy on the back at a comfortable working height using a basket system – completely without the need for an overhead crane.
What products can I preserve with the NEH2O?
The NEH2O is suitable for a wide range of food products, including meat and sausage products, soups and stews, sauces, ready meals and delicatessen products. Products can be filled into Weck jars, screw-top jars, preserving jars, cans or vacuum packaging, for example. Depending on the product and packaging, you can select the appropriate process for safe, gentle and consistent heat treatment.
Which sterilization processes are available?
The NEH2O can operate using either the shower-water or full-water immersion process. In the shower-water process, the product is evenly sprayed with a large volume of water – ideal for cylindrical packaging such as cans and jars. In the full-water process, the product is completely immersed in circulating water, similar to a water bath. This enables particularly homogeneous heat distribution, short heating times and oxygen-free treatment. This means the appropriate process can be selected for virtually any type of packaging.
How safe and easy is the autoclave to operate?
The NEH2O is operated intuitively via a 9" or 12" touchscreen. Up to 250 recipes can be created and managed, ensuring that recurring processes run reliably and consistently. Safety is ensured by the proven Scholz quick-lock system, which is mechanically locked by a pneumatic cylinder.
